Ginger Un-Steamed Raw Rice

Ginger Un-Steamed Raw Rice

There are several versions of "rice" out there using cauliflower. This one uses parsnip as well, mellowing the taste of the raw rice. Can be used in raw indian cuisine, asian dishes or in sushis.

Inspiration: Carmella of RFC

1 1/2 - 2 cups cauliflower
1 1/2 cups parsnip
Salt or miso, to taste
2 heaping spoonful of almond butter (or tahini or both)
1 tbsp grated fresh ginger
A little lemon juice

Process cauliflower and parsnip in food processor until rice-size. Mix other ingredients by hand.

Bon rawppétit!
